What is a kapsalon?
A kapsalon is a tray of fries topped with döner or shawarma, traditionally covered with a layer of melted cheese and finished with salad and sauce, often garlic sauce and sambal (chilli paste). Döner is meat roasted on a vertical spit and sliced thin. Because it is all layered in one tray, every forkful has a bit of everything.
Kapsalon comes from Rotterdam. The name is Dutch for 'hair salon': a hairdresser kept ordering this combination at a shawarma shop, and the dish was named after his salon. Today you will find it all over the Netherlands.
